In the late hours of the night, Shorty Tang’s iconic sesame noodles hit different. The recipe is quick and easy for your midnight dining pleasure.

Ingredients
- 1 lb fresh lo mein noodles (you can substitute for dried pasta, but fresh is preferable)
- 2 Tbsp sesame oil
- 3½ Tbsp soy sauce
- 2 Tbsp Chinese rice vinegar
- 2 Tbsp tahini
- 1½ Tbsp smooth peanut butter
- 1 Tbsp granulated sugar
- 1 Tbsp finely grated ginger
- 2 tsp minced garlic
- 2 tsp chile crisp
- Persian cucumbers, cut into matchsticks
- Sesame seeds, for garnish
- Scallion, for garnish
Preparation
- In a medium bowl, whisk together sesame oil, soy sauce, rice vinegar, tahini (sesame paste would be more authentic, but I had tahini in my fridge), peanut butter, sugar, ginger, garlic and chile crisp
- Toss the cooked noodles into the sauce and garnish with cucumber, sesame seeds, and scallions. Finish with more chile crisp to your taste.
